Peel-a-Pound Soup (Cabbage Soup)

Peel-a-Pound Soup is packed with good-for-you vegetables including cabbage, carrots, onions, and tomatoes. It smells amazing. Some folks eat this healthy cabbage-based soup as a way to drop some pounds after the holidays! 

Meat is optional. We think it’s a perfect use up turkey leftovers. 

Ingredients
2 stalks celery, chopped
2 onions, chopped
1 head green cabbage, shredded
1 green bell pepper, chopped
1 can (16 ounces) tomatoes, with liquid, chopped
3 bouillon cubes
2 teaspoons dried oregano
1 teaspoon celery seeds
1 teaspoon dried basil
1/2 teaspoon garlic powder
salt and freshly ground black pepper, to taste
2 cups diced cooked turkey or beef

Instructions

Combine all ingredients except meat in a pot, adding enough water to completely cover vegetables. Bring to a boil, then reduce heat and simmer for 1 hour. Thirty minutes before cooking time ends, add meat. Serve hot.
