This Sweet and Spicy Vegetable dish is flavorful, aromatic, and healthy. It’s a great choice for a weekday dinner. Serve with rice and chutney.
Ingredients
3 tablespoons vegetable oil
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon ground cardamom
1/2 teaspoon cayenne pepper
1 green bell pepper, finely chopped
2 carrots, finely chopped
2 parsnips, finely chopped
1 tart apple, peeled, cored, and chopped
1 cup fresh orange juice
2 tablespoons raisins
salt and freshly ground black pepper, to taste
cooked rice or naan, for serving
Instructions
In a skillet over medium heat, warm oil. Add onions, garlic, ginger, and spices, and cook, stirring, over low heat, until onion is soft. Add the bell peppers, carrots, parsnips, apples, orange juice, and raisins. Cook for 15 minutes, stirring often, until vegetables are tender. Season with salt and pepper. Serve over rice or with naan.
