Winter Energy Cookies

Crunchy with a bit of chewiness, our wholesome Winter Energy Cookies taste like a granola bar in a cookie with wheat germ, whole-wheat flour, raisins, nuts, and chocolate chips.

Great in the morning with coffee, as a wholesome snack, or as quick fuel for an outdoor activity or exercise!

 

 

Ingredients
1 cup (2 sticks) unsalted butter, softened
1-1/2 cups brown sugar
1/3 cup molasses
1/3 cup smooth peanut butter
2 eggs
1-1/2 teaspoons vanilla extract
1-1/2 cups whole-wheat flour
1 cup all-purpose flour
1 cup toasted wheat germ
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups old fashioned oats
1 cup raisins
1 cup chocolate chips
1 cup chopped walnuts or peanuts

Instructions

Using an electric mixer, cream together butter, brown sugar, molasses, and peanut butter. Blend in eggs and vanilla.

In a separate bowl, combine flours, wheat germ, baking soda, salt, and cinnamon. Stir dry ingredients into creamed mixture until evenly blended. Add oats, raisins, chocolate chips, and nuts. Refrigerate for at least 1 hour.

Preheat oven to 350°F. Grease baking sheets or line with parchment paper.

Shape dough into balls using 1/4 cup of dough per cookie. Place on prepared  baking sheets, leaving 3 inches between cookies. Flatten slightly with a fork. Bake for 15 to 18 minutes, or tops are soft to the touch. Cool on baking sheets for 5 minutes, then transfer to a rack to cool.
