Watermelon Cucumber Salad

This minty Watermelon Cucumber Salad is a light, fresh, and cool salad that can be enjoyed anytime and with any meal or just as a nice in-between-meal snack. Crumbled feta cheese optional but we think it somehow just works with watermelon!

Eliminate the red onion if you wish. Add more protein with pistachios. Change the ratio of watermelon to cukes. This salad is flexible!

Ingredients
1/4 cup olive oil
1/8 cup red wine vinegar (or balsamic)
2 tablespoons chopped fresh mint or cilantro
1/4 teaspoon crushed red pepper flakes
5 cups cubed seedless watermelon (from 5-lb watermelon)
2 cups seeded and sliced cucumbers
1/4 cup thinly sliced red onion
Optional: 1/3 cup crumbled feta cheese.
Salt and pepper to taste

Instructions

In one bowl, mix olive oil, vinegar, mint, red pepper flakes, and salt/pepper seasoning. 

In another bowl, combine watermelon, cucumbers, and onions. Add optional feta.

Pour dressing over fruit and vegetables and toss to coat.

Taste and add more salt if needed.

Chill in the refrigerator for at least 1 hour.
